Serves: 4 | Preparation time: 5 mins | Cooking time: 10 mins
- Veal: 1 kg
- Pitted green olives: 100 g
- White wine, dry: 75 ml
- White onions: ½
- Rosemary, fresh: 1 sprig
- Curry powder: 1 tsp
- Extra virgin olive oil (EVOO): as needed
- Salt and pepper: to taste
Finely mince the olives and the onion and set them aside. Cut the veal in bite-sized cubes.
Heat up the oil in a pan and brown the onion and the rosemary for a couple of minutes. Add the veal and pour in the wine. Leave it to simmer over high heat until the liquid has almost completely evaporated.
Add the olives and the curry and season to taste. Cook over high heat for about 10 minutes or until the veal is cooked through.
